This easy Apple Cider Donut Bread is a soft, moist, buttery loaf packed with concentrated apple cider and warm fall spices. It's finished with melted butter and cinnamon sugar for a sweet, slightly crisp coating that gives every slice the delicious flavor of a classic apple cider donut.
Preheat the oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan and line it with parchment paper.
Pour the apple cider into a saucepan and bring it to a gentle boil. Reduce the heat and simmer until the cider reduces from 2 cups to 1 cup. Remove from the heat and let it cool completely.
In a medium bowl, whisk together the flour, apple pie spice, baking powder, baking soda, and salt.
In a large bowl, beat the softened butter and brown sugar until light and creamy.
Add the egg and vanilla extract and mix until well combined.
Pour in the cooled reduced apple cider and mix until combined.
