Air Fryer Corn Ribs

Ingredients
- 2 ears fresh sweet corn
- 2 tablespoons unsalted butter melted
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon chopped fresh parsley
- 1 lime cut into wedges
For the Dipping Sauce
- ¼ cup mayonnaise
- 1 tablespoon sour cream
- 1 teaspoon Sriracha
- 1 teaspoon fresh lime juice
Instructions
- Preheat the air fryer to 400°F (200°C).
- Trim the ends of each corn cob.
- Carefully cut each cob in half lengthwise, then cut each half into two pieces to make four corn ribs.
- In a small bowl, whisk together the melted butter, olive oil, smoked paprika, garlic powder, onion powder, chili powder, salt, and black pepper.
- Brush the seasoning mixture evenly over all sides of the corn ribs.
- Arrange the corn ribs in a single layer in the air fryer basket.
- Air fry for 12 to 15 minutes, turning halfway through cooking, until the corn is tender and the edges are lightly charred.
- Transfer the corn ribs to a serving plate.
- Sprinkle with grated Parmesan cheese and chopped parsley.
- Mix the mayonnaise, sour cream, Sriracha, and lime juice until smooth.
- Serve the corn ribs warm with lime wedges and the dipping sauce.
