Ingredients
3large ripe red tomatoes
1cupcornmeal
1tspdried oregano
1/2tspgarlic powder
1/2tspsalt
2large eggs
1/4cupmilk
1/2cupall-purpose flour
Cooking spray or olive oil spray
Chopped fresh parsleyfor garnish
Optional: shredded cheese or parmesan for topping
Instructions
Slice 🍅 tomatoes into 1/2-inch thick rounds and gently pat dry with paper towels.
Prepare a dredging station: in one bowl, place 🥣 flour; in the second bowl, whisk together 🥚 eggs and 🥛 milk; in the third bowl, mix 🌾 cornmeal, 🌿 oregano, 🧄 garlic powder, and 🧂 salt.
Coat each tomato slice first in 🥣 flour, then dip into the 🥚 egg mixture, and finally dredge in the 🌾 cornmeal coating.
Lightly spray both sides with 🛢️ cooking spray and arrange in a single layer in the air fryer basket.
Air-fry at 400°F (200°C) for 8–10 minutes, flipping halfway through until crispy and golden. Garnish with 🌱 parsley and serve warm.
