Whip up this savory cashew chicken stir-fry in just 25 minutes! Tender chicken, crunchy cashews, and a sweet-savory sauce make it perfect for a weeknight dinner over rice or noodles.


Ingredients

  • 1 lb boneless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, sliced
  • ¾ cup cashews, unsalted
  • 3 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • ½ tsp black pepper
  • 2 green onions, chopped (for garnish)

Instructions

  1. Heat 1 tbsp olive oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook for 5-6 minutes until golden and cooked through. Remove and set aside.
  2. In the same skillet, add the remaining 1 tbsp olive oil. Sauté garlic, onion for 4-5 minutes until tender-crisp.
  3. In a small bowl, whisk together soy sauce, hoisin sauce, honey, sesame oil, and black pepper to make the sauce.
  4. Return the chicken to the skillet, add cashews, and pour the sauce over everything. Stir well to coat and cook for 2-3 minutes until heated through.
  5. Garnish with green onions and serve hot over rice or noodles.
