- 1 lb boneless chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 small onion, sliced
- ¾ cup cashews, unsalted
- 3 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp honey
- 1 tsp sesame oil
- ½ tsp black pepper
- 2 green onions, chopped (for garnish)
Instructions
- Heat 1 tbsp olive oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook for 5-6 minutes until golden and cooked through. Remove and set aside.
- In the same skillet, add the remaining 1 tbsp olive oil. Sauté garlic, onion for 4-5 minutes until tender-crisp.
- In a small bowl, whisk together soy sauce, hoisin sauce, honey, sesame oil, and black pepper to make the sauce.
- Return the chicken to the skillet, add cashews, and pour the sauce over everything. Stir well to coat and cook for 2-3 minutes until heated through.
- Garnish with green onions and serve hot over rice or noodles.
