Ingredients

  • 1 lb boneless chicken breast, cut into bite-sized pieces
  • 1 lemon (juice and zest)
  • 3 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup orzo pasta
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil

Instructions

  1. Cook the orzo pasta according to package instructions, drain, and set aside.
  2. In a large skillet, heat 1 tbsp olive oil over medium heat. Add chicken pieces, season with salt, pepper, and Italian seasoning, and cook until golden brown, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add the remaining olive oil, garlic, broccoli, bell pepper, and zucchini. Sauté until tender, about 5 minutes.
  4. Return the chicken to the skillet, add lemon juice, zest, and cooked orzo. Stir to combine and heat through for 2 minutes.
  5. Sprinkle with Parmesan and parsley before serving.
