- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked long-grain rice
- 1 can (15 oz) diced tomatoes, drained
- 2 cups beef broth
- 1 ½ cups shredded cheddar cheese
- ½ cup sour cream
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet, cook ground beef, onion, and garlic over medium heat for 6-8 minutes until beef is browned and onions are soft. Drain excess fat.
- Stir in uncooked rice, diced tomatoes, beef broth, salt, black pepper, and paprika. Bring to a simmer, then transfer to the baking dish.
- Cover with foil and bake for 45 minutes, or until rice is tender. Remove foil, stir in sour cream and 1 cup cheddar cheese, then top with remaining cheese.
- Bake uncovered for 5-7 minutes until cheese is melted and bubbly. Garnish with parsley and serve warm.
